Libyan Soup Recipe


3 spoons of extra virgin olive oil 
1/2 - 3/4 table spoon salt
1/2 onion-chopped
½ teaspoon turmeric
½ lamb meat (you can choose boneless or some bones)- (cut into small-medium pieces)
1/4 teaspoon chilli pepper
1/2 of a 6oz tomato paste can
3 spoons of vermicelli noodles

1-2 tbsp of chopped parsley
1-2 tbsp of chopped cilantro 
 1-2 tbsp of dry mint


1. Take a small pot and fill it with water and let it come to a boil. Meanwhile, put the oil in a medium frying pot under medium heat.

2. Add the onions and meat and let them fry until the onions turn a little golden brown.

3. Then add the tomato paste, salt and spices and let them fry until the tomato paste cooks a bit (about 5 minutes).

4. Then add the boiled water to the pot so that it fills the entire pot. If the boiled water is not enough to fill the medium pot to the top then boil some more water and add. Let the soup come to a boil and then lower the heat to medium- low heat and let it cook until the meat cooks.

5. When the meat is cooked, add soup vermicelli and let them cook about 10-15 min

6. Once they are cooked add the parsley, cilantro, and mint. Mix and there you go voila! Your soup should be ready. You can taste for salt- if u need to add more then add.
